The idea comes after being always on the move between countries, continents and cultures. Here, together with Francesca (his better half in life and at work), Paolo establishes his creative station and starts mixing and emulsifying with Provençal colours, the outcomes of his numerous experiences.
Complementarity is a determining aspect in Paolo’s life and it’s the hinge of his Ramatuelle project: complementarity of male culinary emphasis and maternal way of hosting, complementarity of Italy and France, of heart and brain, of body and soul, of dreams and concreteness. Francesca’s calm affability able to sooth Paolo’s “fire” and “ardours”, is probably the perfect metaphor for the extraordinary and faithful Italian cuisine, promoted in French territory.
